Coffee cherries are hand sorted for unripe and overripe by farmers before they go into production. The pulp is removed and the coffee is fermented for 24-36 hours under close shade depending on weather temperatures. After fermentation, the coffees are washed and again sorted by density in the washing channels. They are then taken to drying tables where they will be dried in the sun on African drying beds for 12 to 20 days (this time depends on weather conditions). The cafes are covered with plastic during midday and at night to protect the beans from nocturnal humidity and rain.

About the Estate

This farm is located in the Embu region, it is located on the southeastern foothills of Mount Kenya, the highest mountain in the country and the second highest in Africa after Kilimanjaro. The extinct volcano forms the backdrop for much of the surrounding country, as well as contributing to the soil fertility and fresh air that allows Kenyan coffees to develop such excellence in the cup. The Gakundu factory is located at an altitude of 1,650 meters above sea level and processes cherries from 1,262 small local farmers. Farmers are encouraged to intercrop with plantain and corn, as well as Grevillea and Macadamia trees to provide shade and promote soil health.
