About the Farm
Finca Idealista has spent years developing the best way to perform carbonic maceration in nano-batches of its Pacas and Caturra varieties (not to mention the effort of passing through customs with equipment like air traps, pH meters, and liquids). This batch is the result of trial and error, as well as collaboration with producers from other countries who shared their experiences and best practices to achieve surprising cupping results. We believe we have it down to a science now, although we are open to further experimentation in the future. This coffee does not taste like a conventional coffee.
