About this coffee

This pioneering community batch of the Slow Food Coffee Coalition brings together the work of 17 small producers from 10 municipalities in the south-central part of Nariño, located on the slopes of the Galeres Volcano (1800–2050 m above sea level). These are small farms (1–10 ha), steep and difficult to access, where in addition to coffee, products such as sugarcane, corn and potatoes are grown. Although there are sections with good connections (including the Pan-American Highway), many communities are isolated and transporting the coffee to the winery in Pasto increases production costs. The group is moving forward to formally consolidate itself as a Slow Food Coalition from the 2025 harvest, with the intention that this coffee will be purchased each year during the main harvest (June to September). The process is traditional washing: harvesting ripe cherries, stripping on the farm, fermentation in tanks for 12–48 hours, washing and drying in patios or parabolic dryers depending on the infrastructure. The idea is that this project and its coffee become recurring on the menu, recognizing the effort and dedication of those who produce it.
